Some new, fall-themed recipes for your viewing pleasure:

Apple Pumpkin Muffins

These were a huge hit at my house - mini-muffins are very popular right now. I substituted 1 cup of whole wheat flour, reduced the sugar to 1 1/2 cups, and added a handful of chopped walnuts for extra protien. Oh, and I didn't bother with the struesel, because I'm lazy. The kids ate them like they were going out of style.

I'm in charge of snacks at the montessori this week - I might make these later in the week, if what I've already brought runs low. I'll probably just use oats, though.
